The cuts are brisket, chuck eye steak, Denver steak, flat iron steak, ribeye, ground beef, filet mignon, osso buco (shank), New York strip, skirt steak, flank steak, sirloin, cutlets, stew meat, ribs, roast, tri-tip, and picanha. The meat is vacuum packed and frozen.
